Thanksgiving 2015

So I'm sure you're all wondering how my first low carb/high fat Thanksgiving went and did I stick to the plan. I'm happy to announce that I sure as heck did!

Of course it's not that hard to stay low carb on Thanksgiving because the main event of the meal are pure protein.

But those side dishes!!! Mashed potatoes with gravy, rolls with butter, dressing made with cornbread and/or bread, pumpkin pies, breads, rolls!

Luckily I have help in my WOE (way of eating)! My mom made for me a special low carb stuffing alongside the regular stuffing she made for the rest of the family. As luck would have it I did not get a picture of it, but she took the ground beef she had browned and put about two cups into a separate pan. She added chopped bell pepper, green onion and celery. When I saw what she was doing I gave her a big hug and then I added some chopped cauliflower. She added the chicken broth and when it was almost done I added about a cup of chopped pecans! It was delish and I didn't even miss the bread! It had a nutty rich, crunchy texture and that wonderful bell pepper/celery/green onion taste that I love!

I also made a low carb version of cranberry sauce, this one from Gourmet Girl Cooks. It's a Cranberry Orange Coconut Sauce. Her picture is much prettier than mine, but it still tasted delicious! Some of my family members that swore they did not like cranberry sauce tasted it and loved it.

As I am not one to love feeling left out I made a low carb pumpkin dessert for me to enjoy while the rest of the family enjoyed the regular pumpkin pies that I made. The recipe for this I found on the most awesome low carb site ever!!! Linda's Low Carb Menus or genaw.com

This website is a staple for almost all low carb eaters. I've enjoyed many of her recipes and they always turn out perfectly! The recipe I chose was Jody's Pumpkin Bake and it was better than real pumpkin pie! Again, those that tasted it had a slice of this instead of the regular pumpkin pies I had baked. I added a dollop of whipped cream and then had the bright idea to top it with slivered almonds which gave it a delightful crunch and a nutty flavor!

So these dishes along with some green beans sauteed in bacon fat with almonds were so satisfying that I didn't even miss the rolls or the mashed potatoes. I had planned to make a cauliflower mash but time got away from me and it's hard to make room in a kitchen when there was already so many other foods being prepared.

So it was a great Thanksgiving spent with family and I'm glad I didn't give in to temptation, in fact, I wasn't even tempted! Now we'll see how I cope with Christmas as that is when we make and eat Tamales and it's really hard to find a low carb method of making those since three quarters of the tamale is made with corn masa. But I'm not worried, I'll figure something out!

Doing Thanksgiving Day Low Carb Style

I can't believe that November is almost over! Next week will be Thanksgiving already. How time flies!

And speaking of Thanksgiving being next week I have to admit I'm a bit worried about what to eat. You see...my mom makes the best stuffing/dressing on the planet. I love her stuffing, it's my whole reason for living! But as all good stuffing is, it's made with bread and bread is one of the item that I don't eat in my new way of eating, LCHF (low carb/high fat).  So I've been researching ideas in my head of how to have a Happy Low-Carb Thanksgiving.

The Turkey and Ham are a given, luckily I can have that without too much worry. The ham may have a syrup glaze on it so of course I would need to be more careful with that. But what about all those lovely sides? Buttery mashed potatoes drenched in gravy, stuffing made with bread and those fluffy soft dinner rolls that we all love to slather with butter. Then there are the pies and cheesecakes and cookies and pumpkin breads! What's a low carb girl to do?

I am not a foodie, I don't invent foods or make tweaks to current recipes to transform them to low carb, but lots of others do. There are hundreds of bloggers and foodies out there that love to share their ideas. This is the best time ever to be a low-carb eater!

My mom's stuffing, that is my kryponite! That is what will be the hardest to stay away from. I have promised myself a small helping in the morning while mom is making it. Just 1/4 of a cup. I'm not even going to try to figure out how many carbs will be in that 1/4 of a cup I'm just going to eat it and savor it and be extremely grateful that my mom is still with me and able to make stuffing for me again!

However, I am also going to make this lower carb version from Davida of The Healthy Maven blog,  Cauliflower Rice Stuffing from The Healthy Maven.

Cauliflower Rice Stuffing from The Healthy Maven
Doesn't that look delicious? The stuff that looks like bread...that's cauliflower! This sounds so amazing, it also uses yellow onion, garlic, celery, mushrooms, pecans, sage poultry seasoning, red wine vinegar, salt and pepper. I'm not a big fan of the mushroom so I think I will leave that out. Mom makes her stuffing by using ground beef, I know lots of others use sausage, to I will replace the mushrooms with ground beef. One serving made with the ground beef instead of the mushrooms will be close to 8 carbs.

Another favorite of mine is the cranberry sauce. You're all going to shake your head at me and "tsk-tsk" me because I love and adore canned cranberry sauce, both the jellied and non-jellied version. Hey! It's what I know, it's what I was brought up on! Love this stuff!

Unfortunately it's a bit high in carbs as well as it's made with sugar and high fructose corn syrup. 1/4 of a cup will be 28 carbs.

So I have been searching high and low for an alternative as I really do love this stuff on my turkey!.

I came across this recipe that was also shared on The Healthy Mavens blog but is a creation of Gina from the blog Running to the Kitchen.

This is 5-ingredient slow cooker Cranberry Sauce. Best thing it's slow cooked, so you can prep it, set it and forget it! This will lower the carb count to about 8 per serving. I will miss my canned jellied cranberry sauce though!

What I will be on the hunt for next is something to replace my pumpkin pie! That was even hard to type, but it must be done. For those of you that have been following my low carb journey, I have now lost 23 pounds. I feel so great and I am having so much fun fitting into my skinny clothes again! Yay me! So yes, I could splurge, I could do a cheat day, but looking at these yummy recipes above, why would I want to when I can substitute with equally fulfilling and delicious dishes?

What is your favorite Thanksgiving food that you can't live without?

Thanksgiving 2013

My sister and I have realized that my blog is a great way to keep track of what we did the previous year for the holiday, so I'm going to update my blog to keep track of this year, 2013. So this is mainly just photos.

Thanksgiving was very low key, spent it with my sister Lisa and her family.

The day started with mom and I heading to Thanksgiving Day Mass.

By the time we left our turkey was in the oven and stuffing was made!

This was a semi-sad Thanksgiving for us because my dad passed away in July, but we were blessed with a new family member in this year and I know my dad was smiling down on this little angel, happy that she was here to lighten our hearts.

Introducing, Jaelynn, or as I like to call her, Baby J!

She is my sister Lisa's first granddaughter and she is the sweetest most adorable baby ever! Look at that face! She is the perfect mimicker, make a sound or a face and she mimics it! Check out this video!

We spent a lot of our afternoon just watching Baby J play! Baby J is not only my sister's first granddaughter, but she is also the very first great grand baby for my mom!

Here's my sister Lisa, Baby J and my mom in the top picture. Baby J's daddy, Sean keeping a watchful eye on his little girl in the bottom left picture (he is just enchanted by her!) and then Nana showing off her great granddaughter in the bottom right picture!

Later on all the boys showed up, here's a picture of the men in my sister Lisa's life. From the left, her husband Sean Sr, then Baby J's daddy Sean Jr and the baby of the family, Isaac.

Then it was time for the cousins to get a picture. From the left, my son James, his cousins Sean and Isaac.

Apparently no one wanted to take a picture of me, so I had to do a selfie! All in all it was a very nice way to spend time giving Thanks. I'm thankful to have all the people pictured above in my life!!!

Back to Work

This year I took a a couple of vacation days, the day before Thanksgiving and the following Monday, which is today. That made for a nice, long vacation. I had Wednesday, Thursday, Friday, Saturday, Sunday and Monday off and I am so not looking forward to going back to work tomorrow.

Wednesday I got up early and my mom and I went into the city (Bakersfield) and had a nice breakfast and hit a couple of Goodwill Stores. My mom and I love thrift store shopping! I was searching for Christmas decor but didn't find anything. After Goodwill-ing, we went grocery store shopping for Thanksgiving items, all the pie, stuffing and mashed potato fixings.

Once we got home and put everything away it was time to make the pies. We used to make the crust from scratch, but since frozen pie crusts have gotten so much better we use those, but we do make the pie filling from scratch...well from a can but that's from scratch for us!

Thursday of course was Thanksgiving and we spent the morning straightening up the house, getting the extra chairs all ready and making the stuffing and turkey, then the family arrived and we had a wonderful meal and enjoyed seeing each other all together again.

We barely remembered to take pictures. Here's my mom and standing next to her my sister Lisa and then sitting is me and my brother Fred and his youngest, Melissa, the baby in our family and isn't she beautiful!

I had to get a picture with just me and Melissa of course!

Here's a picture of my godson and Melissa's big brother, little Fred.

After everyone left I spent about two hours getting everything cleaned and put away in my kitchen. Friday was a relaxing morning and then we all met in Bakersfield again to celebrate Thanksgiving with my dad. We took dad to Golden Corral because he loves buffets. I had a great time having all my family together again and I know dad really enjoyed it.

Here's the only picture I managed to get. This is my dad and on the right is my son James and on the left is my sister's son Isaac, who also is my Godson! Can you believe that my dad is 6 foot and both his grandsons are taller and bigger than he is???

Saturday I had to go and get new tires put on my car. My son James, (in the picture above) went with me. We had a great time considering we had to wait for two hours at Big O Tires! We spent the time playing Monopoly on his cell phone and I won!!! Of course he helped me to win and when I was almost losing he bankrupted and gave me all his money and property. Wasn't that nice of him?

Sunday I went on STRIKE and said I was not doing anything the whole day...and I didn't. I just watched movies on NetFlix and played on the computer and watched TV and read my book and chillaxed all day. My daughter's little puppy Chorizo was as exhausted and I was and laid on the little bed we've set up for her in my bedroom. Doesn't she look comfortable?

So today, the whole world went back to work...but not me :)

I decided to spend the day putting up the Christmas Tree and decorating the inside of the house. This year I decided not to put the Martha Stewart ribbon and garland that I love, love, love. I decided to try something different. I don't like it! Not sure if I am going to do it over or just live with it as-is for this year, but it's just too plain! I do love that where I put the tree this year it's reflected in the mirror, double the lights and sparkle....love that!

So tomorrow it's back to the real world and for once I'm not really looking forward to going back. I had a great Thanksgiving and a wonderful time being off. Can't wait for Christmas and tamale making and Biscocho baking!

How are your holidays shaping up? All your shopping done? To tell the truth I haven't even started, so don't feel bad if you haven't either.

Iwanna Wednesday - Looking for a few good Pilgrims!

This weekend I put away my Halloween decor and started putting out Thanksgiving stuff, but alas...I didn't have much. I have three ceramic turkeys and one little horn of plenty or Cornucopia.

I've been looking around for a while now trying to find Pilgrims, last year they were everywhere! Lurking around every corner, at HomeGoods, Goodwill, The Dollar Store and Walmart, this year they all went AWOL!

So what Iwanna for this Iwanna Wednesday is to show you some that I found online. Some wonderful and beautiful, some crazy funny and some that are just crazy! Follow me...let's see!

This one falls in the wonderful and beautiful category! I just love it, the cute little iron arms and the little basket and lantern and the base they put it on, looks like little, tiny, baby tiles! There is nothing about this one I don't love! Oh...well maybe I don't love the price too much, $34.50 for just one Pilgrim?  That's a bit too steep for me, but if you can't live without this little gem, you can find her at Jim Shore Heartwood Creek Collectibles at Main Attractions.

And this one also is wonderful and beautiful. It's the Pilgrim couple and an Indian couple. I love the little saying on the apron of each of the women too. Iwanna this set and they are on amazon.com but unfortunately they are currently unavailable *sigh*! What a surprise!

Here's a crazy funny one. These little guys are just so cute! I love their big feet and they are very patriotic with their little flag. This is Pete and Prudence Pilgrim and these are not too bad at $5.95 each...very affordable. These are from Designed to Be Sweet.

I don't know if these are crazy... crazy funny... or wonderful and beautiful. I can't quite make up my mind. I think the beaks give them that crazy vibe but the fact that they are squash make them crazy funny and the fact that they are such perfection and so unique makes them wonderful and beautiful in my eyes! And the way the little one is gazing up at the big one, can you say ahhhhh! This one is from distinctivedecor.com and it runs $14.50, another affordable one but out of my budget for trinkets. If it's not from The Dollar Store or Goodwill I won't usually buy it.

This next one is what I would just call crazy, what say you? I found these on ebay at $50.99!!! These are troll dolls, remember these? These were huge in the 1970's you could find them everywhere! But to make them Pilgrims??? Crazy, crazy, crazy...but cute. To a collector I'm sure $50 for them would be nothing. I'll have to keep an eye out for these guys at Goodwill!

And do you love Nesting Dolls? Who doesn't right? Well I love these Pilgrim Nesting Dolls, so cute and so easy to store. These I found on Etsy for a mere $65.00! You can actually customize these anyway you want.

And this last one is my absolute favorite, Iwanna this one cause it's so darned cute! I know it may be a little bit macabre, the Pilgrim lovingly kissing the sweet little turkey on the head when behind his back he has the hatchet ready and waiting and you know he's getting ready to swing it. But times were tough in Pilgrim days and you had to be brave enough to kill your own turkey. I'm really glad that now we can find them easily in the refrigerated aisles of our local grocery stores (sorry to any vegetarians). This little guy was also on ebay for $13.79 and "bonus" he's a salt and pepper shaker!

But I will keep searching in the after Thanksgiving sales and throughout the year and hopefully next year I will have a whole little Pilgrim Kingdom!

Happy Iwanna Wednesday and may all your Iwanna wishes come true!

Mosaic Monday - Turkey Photo Shoot

I've been wanting to share a thrift store find with everyone but because they were Thanksgiving Day decor I wanted to wait until it was closer to Thanksgiving and I actually had my few Thanksgiving decorations up. I'm joining in two separate sharing parties this week with this post.

The first is Mosaic Monday at Little Red House and then on Thrift Store Thursday with Homebody Holly.

Almost a month ago I went to one of my favorite thrift stores, the American Cancer Society Discovery Store. It was during our "Sister Friday Night" when my sis and I get together and have dinner, do some shopping or something else fun.

I was lucky enough to find three turkeys amongst all the Halloween decorations and today I spent time re-doing my fall decorations to include them. I hope you enjoy the following mosaics.

What I love best about these is the tail shot because I love the way that they included some Thanksgiving harvest items right below their little turkey butts! Isn't that cute? I love the attention to detail.

In this first one, the one at the bottom right is a different metal turkey, the other three shots are ceramic.

In this mosaic, I put that same metal shot in the top left. I love this little metal guy. I didn't take a picture of the back of him because there's a candle holder back there that would be impossible to use unless you bent the turkey forward and I think he would break then. I also included a shot of my cloche with a little pumpkin in it. These are all on my mantle.

And this plate collage was a gift from my daughter April. I had seen this at Bed, Bath and Beyond a long time ago and even took a picture of it with my cell phone hoping to find similar plates and put them in this same shape and design.

Then my daughter surprised me with these. This is how they are described on the Bed, Bath and Beyond website:

Plate Collage Wall Plaque This eclectic artwork featuring the rich look of embossed ceramic is sure to transform the aesthetic of any room. The array of colors ranging from golden amber to robin's egg blue will bring a feeling of warmth to its surroundings. Its glossy finish with exciting textures and designs makes this artful collection of plates complete. Equipped to hang either vertically or horizontally. Constructed of metal. Measures 25" x 46".

For now they are hanging over my stove in the kitchen, but that's not going to be their final home. I really want to put them behind the TV in the living room but just haven't had time to get my drill out and put up a sturdy hanger. Maybe after the holidays, but for now they add a lot of color to that white wall behind the stove.

Hope you enjoyed those and I want to be helpful to all the wonderful cooks and new cooks out there that will be preparing Thanksgiving Dinner. I want to share with you my seventeen steps to making a Turkey Dinner.
