I'll never eat canned green beans again and The Kiss of Death!

Do you eat canned green beans?

I have to admit that I've eaten canned green beans my whole life.

I didn't know any better.

I remember once going to Panda Express and having an order of their Chicken Green Beans and the green beans were what caught my fancy. They were so good and crispy.

Recently my co-worker has at times brought some green beans she makes to work and I've loved them. Today I finally had to ask her how she makes them and she was very gracious and told me exactly how.

So I made them and they were divine! As God is my witness I will never eat canned green beans again!

It's so amazingly easy that I just don't understand why I've never just cooked my own green beans before! Just buy fresh green beans, trim the ends and wash them off well. Then take about two tablespoons of bacon grease and warm it up in the pan, add the green beans, a bit of salt and pepper (next time I'm going to add fresh grated garlic). Saute them in the pan for 3 to 4 minutes over medium heat, then cover them and cook for another 3 to 4 minutes, then turn off the heat and let them sit covered in the pan for 15 to 20 minutes.

That's it!

Made for a delicious low-carb dinner when I set them right next to some rotisserie chicken. Yum!



So I am trying...trying so hard to stick to a low-carb WOE (way of eating). And really it's very simple and easy and I'm never hungry...but then my mom brings home the KISS OF DEATH!

Fudge Marshmallow Cookies!!! My absolute favorite kind of cookie ever! I didn't even know they still made these! I can remember eating these as a kid and I loved the marshmallowy center and the crisp cookie underneath all wrapped with chocolate! But I will not succomb...be gone ye evil cookie! (Made mom take them to her room!)

  1. Green beans cooked your way sound very good. My mother used to always doctor up the standard green beans with bacon and cook them a long time and I loved them that way. In recent years I've discovered Old Glory brand green beans that are made just like my mother made only better. And you just have to heat them up and they're ready. Love that brand.

    1. I've gotten so many people telling me how their mothers used to make them. Some with the bacon as you mentioned and some with those little pearl onions. I've always loved the way my mom made them with tomatoes in them, but I'm not a big fan of the mushy green bean, I love my veggies to have some snap to them. But in a pinch...canned is great, it's what I grew up with. Thank you for commenting, much appreciated!

  3. Frozen French cut with almonds. I don't like green beans enough to be bothered with them. My wife likes them but not wild about them. They are OK, but just OK. A-1 Sauce vastly improve them.

    We eat no meat, and yet I go through a bottle of A-1 in a month to 6 weeks. Well I am watching my sodium so the A-1 may go out the window.

    I am a sweetaholic but I have found giving up sodium much more difficult than sweets. It is a PIA to walk through the grocery store bakery though. Such lovely treats mournfully calling my name.

    1. Almonds...hmmm, thats a good idea, I love crunch in my foods!

      I'm not a big fan of A-1 Sauce, or ketchup or mustard. I may eat them once in a while but you are correct my friend...big time sodium there, you need to just quit cold-turkey!

      My sister recently found out that she has high blood pressure and she's had to do the low-sodium diet and between me trying to eat low carb and she trying to eat low sodium we can never find a restaurant anymore to suit us!

      Thankfully I do not have a sweet tooth, but my co-worker does and she is constantly lamenting the fact that she can't have cookies and cakes. Just do the low sodium, no sugar thing during the week and on Sunday allow yourself to have whatever you want within reason. You will see that as long as you know that on Sunday you will have that slice of cake that you can handle turning it down today.

    2. My wife calls me the saucemeister. Ketchup, mustards, mayo, barbecue sauces, horseradish sauce, soy sauce, more salad dressing than you can shake a stick at. Pickles, green olives, pickled peppers. I love all that stuff.

      Eating out is very difficult.

    3. Well yeah! All that stuff is packed with sodium! I don't envy you trying to lower the sodium you eat considering you are the saucemeister! And pickles/olives/pickled peppers??? Packed with sodium unfortunately. Why is everything that tastes good bad for us!!!
