Low Carb French Toast Egg Puff from Sugar Free Like Me

You know how ants love sugar? Well my mom has ant blood in her. She loves sweets! She's also very lucky that she's 5 foot 6 inches tall and has the metabolism of a jack rabbit so she never gains a pound no matter how much or what she eats!!! She's been that way all her life!

Every Saturday and Sunday morning my sister comes over for coffee. It's our time to catch up on the week we just had and to spend time with mom. We've gone through so many things together during our coffee klatches, some good, some bad but always together and I am so grateful to have both of these women in my life.

My sister inherited my mom's sweet tooth and for the past few months when we get together they share some cookies or lemon cake or donuts with their coffee and I just sit there with my coffee feeling sorry for myself because I don't eat sugar due to my low carb/high fat way of eating. 

Earlier this week I found a great low carb blog, Sugar Free Like Me! The first post was about 20 Days of Easy Low Carb Breakfasts! The first breakfast feature was just what I needed in my life! Low Carb French Toast Egg Puff! I'll be honest and let you know that I didn't get any further than this recipe but I will definitely be heading over to see what else Jessie has shared once I'm done with this post.


So this morning I really quickly just tossed this all together following her recipe...she makes it super simple! She mentions using Torani sugar free vanilla syrup, but I didn't have any. I did have however a bottle of Jordan's Skinny Syrups sugar free Coconut syrup, so I added that and it was fabulous! 


Yesterday afternoon I had a craving for something sweet so I mixed about 4 ounces of Cream Cheese with a dash of vanilla extract and a dash of cinnamon, along with half a teaspoon of Splenda to make an easy low carb dip for some fresh strawberries. I had some left over and just slathered some on to my french toast since I didn't have any sugar free pancake syrup (but I am picking some up soon).

It was so delicious. I was worried that it would taste eggy since the recipe calls for 2 eggs and 2 ounces of cream cheese to be mixed with the sugar free syrup, but it really, truly tasted just like french toast. I think next time I may make it like Jessie has posted then fry it in a pan with a bit of butter to see if it might get a bit crispy around the edges...hey, it's worth a shot.

But now, when those sugar ants are having their cookies and cake in the morning, I can have this. It's a mere 2 carbs with probably another carb for the cream cheese frosting. Not bad at all!


Sticking with a low carb way of eating is so much easier because of people like Jessie that share their recipes and tips and idea. I'm proud to say I've lost 13 pounds! I'm pretty jazzed about that!

  1. It is great you found a healthier way to eat sweets with your mother and sister. My husband's metabolism sounds a lot like your mother's. For years I felt sorry for myself that I could not eat what he eats nor how much he eats. It was when I stopped feeling as if I was being punished, while watching him eat, that I finally lost a lot of weight. The whole "it is not fair" and "I deserve to be able to eat that" has/had been a strong under current in my life long struggle to be healthy and not overweight!

    1. I agree 100%! That is one of the things that always ran through my head, how unfair it is and how I too deserve to eat anything I want. It's taken me years and years to get that behind me and still at times it rears it's ugly head. But fortunately there are so many low-carb cooks out there creating delicious alternatives. It's still not easy. There are still times when I'm sitting in a restaurant with friends or family and I too want to eat chips and salsa or bread and butter, but somehow...for now, I have the determination. And I know I will stick with it.

    2. The other (ugly) side to the conversation in my head is whether or not I deserve to eat anything at all somedays when I have been a real slug bug or couch potato. When my mother was visiting a few months ago, and I asked her if she wanted dessert after lunch, her response was that she didn't deserve it. It was a real aha moment for me. And to top it off, my mother is a very thin woman who works out a lot. But the idea of deserving food ONLY under certain circumstances if the other side of the coin. And neither side is healthy for me!

    3. Oh wow, that is an aha moment. Our mothers are such a big part of who we are and how we relate to food. My mom lives with me and ever since she moved in she has felt that she is a burden to me and the best way she can be useful in my life is to make dinner for me. I swear I gained 20 pounds the first year she moved in because I was eating what she cooked so that she felt useful and it was killing me. Now she has learned to cook more "low carb" but she still forgets and she can make me some protein with a healthy vegetable and then offer me rice or bread or a tortilla.

      I can understand thinking that you don't deserve to eat, we all have so many issues with food. I always used to go ahead and eat whatever even though I was a slug bug and I would fool myself into thinking "tomorrow, tomorrow will be different". Well for me tomorrow did come and I'm trying my hardest to be healthy. It's not about looking good or being skinny, it's about being healthy. That's my motivation at this point in my life.

  2. Diets make one creative. That's the good point about them. This french toast puff looks like a lovely, tasty food creation. Enjoy! You certainly deserve it after loosing 13 pounds.

    1. Thank you DUTA. I don't normally crave sweets. But sometimes when I see my mom and sister enjoying some kind of sweet bread with their coffee I want to join in. This way I can. Will be making this often!

    1. You are so welcome. I hope you enjoyed it. I've made it a couple more times, sometimes with just a sprinkling of cinnamon or with some sugar free jam. Definitely a keeper of a recipe!
